
For our daughter’s first birthday, we decided to spoil her with a delicious and healthy “chocolate” mousse cake. I guess that from the pictures, you decided that this is a super chocolate cake, but there are zero grams of chocolate, no cereal, no sugar, and no gluten and that is why this baby birthday cake is a perfect choice. We also made another no sugar white mousse cake. You can check the recipe here. So here is the recipe in two steps:
1. Ingredients for the Small No Chocolate Cake
- 2 eggs
- 9-10 datesÂ
- 2 spoons coconut oil (20ml)
- 4-5 spoons yogurt (80-100ml)
- 1 small spoon of baking sodaÂ
- 2 spoons carob powder (20ml)
- 2 spoons coconut flour (20ml)
- vanilla
- rum or essence rum for flavor
Preparation of the basis:
- Blend the eggs, peeled dates, the soft coconut oil, and the flavors you choose on a smooth mix.
- Weigh the yogurt and mix it with the baking soda. Combine the two mixtures.
- Then add the carob powder, coconut flour, and gently mix with a spoon.
- Pour and line the mixture into the container you have selected. Bake for 20 minutes in a 180-degree preheated oven with a fan.
- Leave to cool.
2. Ingredients for the mousse:
- 3 medium ripe bananas
- 3 spoons almond paste/peanut butter (30ml)
- 5 spoons melted coconut oil (100ml)
- 5 spoons carob powder (100ml)
- vanilla
- rum or essence rum for flavor
- fresh fruits to choose from for garnishing
Preparation of the mousse:
- Blend all cream products to smoothness. This can be done in a blender.
- Pour the mousse over the cooled basis.
- Refrigerate for at least 2-3 hours, but it is better to wait for a night.
3. Decoration
This is the time to unleash your inner designer and give the cake some of your’s style. I love decorating cakes with fruits because they give the cake uniqueness and don’t forget that they are healthy as well.
Note that I’m using 8-inch non-stick pan with a removable bottom, you may need to adjust the recipe according to your pan.
